 Bran Muffin Mix

Bran Muffin Mix

1 1/4 cup self-rising flour
1/2 cup white granulated or brown sugar
1 cup raisins
1 1/2 cup bran cereal

Use a 1 quart, wide-mouth canning jar. Pack each layer.
To the jar add the flour, the Pour in sugar, the raisins,
and the cereal. Seal and decorate jar, and attach the
recipe tag.

Bran Muffins
You will need:
1/2 cup butter
1 egg, slightly beaten
1/2 cup milk or apple juice
Use a large bowl and add the contents of the jar.
Mix in the butter, egg and milk blend well. Place
the batter in a well greased muffin pan, filling each
cup 2/3 full. Bake at 400 degrees F. for 15-18 minutes.
Variation: For Pineapple Bran Muffins, adding an 8 ounce
can crushed pineapple, drained to the batter.

Oat Muffin Mix

1 1/2 cups all-purpose flour
2 tsps. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 cup oats
1/2 cup brown sugar

Use a 1 quart, wide-mouth canning jar. Pack each layer.
Combine the flour, baking powder, baking soda, and salt
together in a bowl, and then pour into the jar. Add the
oats and the brown sugar. Stuff any space left with
some plastic wrap or sandwich baggies. Seal and decorate
the jar, and attach the recipe tag.

Oat Muffins
You will need:
1/4 cup butter, melted
1 cup milk
1 egg
Use a large bowl to beat the butter, milk and egg together
until mixed thoroughly. Pour in the contents of the jar and
mix well. Pour into a greased 12 muffin pan. Bake at 400
degrees F. for 22-25 minutes. Cool.
Variation: For fruit oat muffins: after the brown sugar,
add 3 tsps. finely chopped candied lemon peel, then 1/2
cup chopped dried cherries, apples or apricots and then
1/3 cup chopped almonds or walnuts to the jar.

California Corn Bread Mix

2 cups biscuit baking mix
1 tablespoon baking powder
1/2 cup cornmeal
1/2 cup sugar

Use a 1 quart, wide-mouth canning jar. Pack each layer.
Combine the biscuit baking mix with the baking powder
and pour into the jar. Add the cornmeal and the sugar.
Seal and decorate the jar, and attach the recipe tag.

California Corn Bread
You will need:
2 eggs, slightly beaten
1 cup milk
1/2 cup butter, melted
Pour the contents of the jar into a large bowl. Add the
eggs, milk and butter, and blend well. Pour the batter
into a greased 8" pan. Bake at 350 degrees F. for
25-30 minutes, or until lightly golden. Serves 5.

Chocolate Chip Muffin Mix

2 c. flour
2 tsp. baking powder
1/3 c. light brown sugar
1/3 c. white granulated sugar
2/3 c. chocolate chips
1/3 c. chopped walnuts, optional

Use a 1 quart, wide-mouth canning jar. Pack each layer.
Combine the flour and baking powder together and pour
int the jar, then add the brown sugar, and the white sugar.
Put the chocolate chips and walnuts into a resealable bag,
and place on top of the other ingredients in the jar. Seal
and decorate the jar, and attach the recipe tag.

Chocolate Chip Muffins
You will need:
1/2 cup butter, melted
2 eggs, slightly beaten
1 tsp. vanilla
2/3 cup of milk
Remove the chocolate chips and nuts from the jar and set
aside. Use a large bowl to mix the contents of the jar
together. In another bowl, beat together butter, eggs,
vanilla and milk. Add the egg mixture to the muffin mix
and blend well. Blend in the nuts and chocolate chips.
Using a greased muffin pan, fill each muffin cup about
2/3 full. Bake at 400 degrees F. for about 15 to 20 minutes. Cool. Makes 1 dozen.

Scottish Shortbread Mix

1 1/2 cups all purpose flour

1/4 teaspoon salt

Use a 1 quart wide mouth jar.
Combine the ingredients together and pour into
the jar. Pack firmly. Seal and decorate, and attach
the recipe tag to the jar.

Scottish Shortbread
You will need:
1 cup softened butter, (2 sticks)
Combine the butter with the jar contents in a large bowl.
Knead the dough and press into an 8" greased pan. Bake
at 300 degrees F. for 55-60 minutes. Serves: 15.

This makes a great Christmas or Birthday gift for anyone who is special .

Heavenly Garlic Bagel Mix In a Jar

3 C. flour
3 1/3 T. brown sugar
1 tsp. salt
1 tsp. garlic powder
1 tsp. parsley flakes
1/4 tsp. paprika
3 1/4 tsp. active dry yeast

Place yeast into a small zip baggie and set aside, or set aside a pre-packaged envelope of yeast. Mix and place remaining ingredients into a quart-size jar. Lay baggie of yeast on top of mix and apply lid.
Attach the following instructions to the jar if giving as a gift:
Heavenly Garlic Bagels

Place all ingredients of the jar plus 1 1/8 cups water into bread pan of your bread maker, in the order recommended by manufacturer. Insert the bread pan into the bread maker, and select "Dough" and loaf size (1 1/2 pound loaf) Select desired delay option, and press Start.
When dough cycle has completed, remove dough from bread maker, and set aside two 1/4-inch balls of dough. You will use these later to determine if it is time to boil your bagels. If the dough pops to the top of the boiling water right away, you are ready! Place dough on a floured surface and divide into 8 equal portions. Form balls, and gently press your thumb through the middle of each ball, and slowly stretch dough into a bagel shape. Leave bagels to rise on same floured surface, lightly covered with a towel.

While bagels are rising, bring 3 quarts of water to a rolling boil. Add 1 tablespoon sugar to boiling water and stir to dissolve sugar. Drop first dough ball (you set these aside earlier) into boiling water, using a slotted spoon. When dough balls pass the test, boil the bagels by dropping them carefully into the boiling water, 2 or 3 at a time. Boil on each side for 1 1/2 minutes, then remove from water and cool on a wire cooling rack for 1 minute.

Brush each bagel with an egg wash (1 egg plus 1 tablespoon water) and sprinkle with sesame or poppy seeds if desired. (Nonstick cooking spray may be substituted for egg wash.) Bake at 400 degrees F on baking sheet which has been sprinkled with cornmeal (can use greased baking sheet), for 12 to 15 minutes or until golden brown.

Variation: Sprinkle with Parmesan cheese and garlic bread seasoning for a more pronounced Italian flavor.

Baking Powder Biscuit Mix


Prepare-ahead mixes save time, and this mix is a great shortcut for biscuits as well as for several cookie recipes, including peanut butter cookies, chocolate chip cookies and crisp sugar cookies.

Use this prepare-ahead mix to make the following: biscuits, peanut butter cookies, chocolate chip cookies, and crisp sugar cookies. (We will feature these recipes in the future.)

Baking Powder Biscuit Mix

This recipe makes 12 cups of mix (or enough for 48 biscuits).

8 cups flour
1/3 cup baking powder
2 teaspoons salt
2 teaspoons cream of tartar
4 teaspoons sugar
2 cups shortening, margarine, or butter

Process 4 cups flour, baking powder, salt, cream of tartar, sugar, and 1 cup shortening in a food processor until the mix is the consistency or cornmeal. Pour into a large bowl. Process the remaining 4 cups flour and 1 cup shortening and using a wire whisk, mix thoroughly with the other batch. Refrigerate.

To make 6-8 biscuits, combine 1 1/2 cups mix with 1/3 cup cold milk. Stir well with a fork until a slightly stiff dough forms. Drop biscuits from a tablespoon onto a baking sheet sprayed with oil. Bake in a preheated 450 oven for 12-14 minutes or until the biscuits are golden brown.

Variations:

To make biscuits for creamed chicken or turkey, add 1/4 teaspoon poultry seasoning to the mix before adding milk.

For shortcake biscuits, add 1 tablespoon sugar to the dry mix before adding milk.

Hush Puppy Mix in a Jar

1 1/2 c. yellow corn meal
3/4 c. flour
3 tbsp. dried minced onion
1 tsp. baking powder
1 tsp. sugar
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. ground red pepper

Combine all ingredients together in a large bowl
and mix well. Place in a jar. Decorate if desired
and attach card. Makes 2 1/4 cups mix.

Hush Puppies
You will need:
vegetable oil
1 1/2 c. buttermilk
1 beaten egg
1 jar mix

In a deep skillet, heat 1 1/2 inches of vegetable oil
to 350F. Combine the mix with buttermilk and egg.
Stir until well blended. Drop by spoonfuls into hot oil.
Fry until golden brown and thoroughly cooked through.
Drain on paper towels and serve.

Onion Bread Mix in a Jar


1/4 cup Dehydrated Onion Flakes

3 & 1/3 cups Flour

2 tablespoons Sugar

1 tablespoon Dry Milk

1 & 1/2 teaspoons Salt

2 & 3/4 teaspoons Active Dry Yeast OR

2 & 1/2 teaspoons Quick Acting Yeast

Place onion flakes in a small zip baggie and set aside. Do the same with yeast, or set aside a prepackaged envelope of yeast. Mix and place the remaining ingredients into a quart sized jar. Lay baggies of onions and yeast on top of mix and place lid on jar. Use scissors to cut a 9 inch-diameter circle from fabric of your choice. Center fabric circle over lid and secure with a rubber band. Tie on a raffia or ribbon bow to cover the rubber band.

Attach a card with the following directions:

1 & 1/8 cups Warm Water (110 degrees F)

1 Tbsp. Vegetable Oil

Place all wet ingredients into the bread pan in the order recommended byyour bread maker manufacturer. Insert the bread pan into the bread maker,and select "White", desired crust color, rapid or normal baking cycle and loaf size. Select desired delay option, and press Start.

You should store these mixes in a cool, dry place just as you would store the pre-packaged mixes you can purchase in the stores.
