 Lime Jello Recipe needed!
« Thread Started on Mar 12, 2005, 6:02pm »

Hi,

I am looking for a lime jello recipe for a salad. The salad contains grated cabbage and carrots. This is not the one with 7 up in it! We have had this for years at Christmas however with the passing of my mother no one can find the recipe. Any help would be appreicated.

Hi and welcome to Nancy's Kitchen. Here is one recipe that sounds like the one you are looking for. Hope it helps.

Cabbage and Carrot Salad

3 ounce package lime Jello
1 cup boiling water
3 tablespoons sugar
1 cup cold water
2 tablespoons vinegar
1 teaspoon salt
1 cup shredded raw cabbage
1 cup grated raw carrots

Prepare Jello in boiling water and stir in sugar. Add cold water, vinegar and salt. Chill; when slightly thickened fold in carrots and cabbage. Chill.

That is the recipe that my mom also makes each Christmas. You are well warned to wait untill it is a bit more than slightly set before adding the veggies. If put in to soon they will sink to the bottom with jello floating on the top.
