2 tablespoons olive oil
2 cloves garlic, smashed
1 package kielbasa sausage, cut in 1/2-inch slices
2 cans white beans, preferably cannellini beans
2 cans low-sodium chicken broth
2 cups greens, such as escarole, kale, spinach or cabbage, cut up.
Salt and pepper to taste
Dash or two of hot sauce (optional)
Put olive oil in a heavy Dutch oven, add smashed garlic cloves and cut up kielbasa, brown. Add 2 cans of beans, with juice, and cook about 4-5 min. Add the chicken broth, salt and pepper and hot sauce, if using. Let simmer about 1/2 hour. Add the greens and simmer until greens are tender. Serve and enjoy.
