Got Bread? (Part Five)
Greek Easter Bread
(I have yet to meet the person who doesn’t like this one! Makes a 1-1/2 lb loaf. A personal adaptation from a recipe I found in The Bread Machine Cookbook #2)
1 cup plus 2 TBSP milk 3 TBSP butter 1 egg 1-1/8 tsp salt 1/3 cup sugar ¼ tsp cinnamon ¼ tsp anise extract 1 tsp grated orange peel 1/8 tsp allspice 3 cups bread flour 2-1/4 tsp yeast
This one will have a dark crust because of the sugar. If your machine has a crust darkness selector or a sweet bread cycle, set it accordingly. Please follow the instructions in the booklet for your bread machine for best results. The order in which to add ingredients may vary per manufacturer.
Dark Pumpernickel
(Very heavy and dense for it’s size. Add the raisins and it will remind you of brown bread – great with baked beans! Makes a 1-1/2 lb loaf.)
1 cup lukewarm water 2 TBSP vegetable oil 3 TBSP molasses 1-1/2 TBSP unsweetened cocoa 1 TBSP brown sugar 1 tsp instant coffee granules 1 tsp salt ¾ cup rye flour ¾ cup whole wheat flour 1-1/2 cups bread flour 2 tsp yeast 1 cup raisins (optional)
It doesn’t rise as much as other breads but is thick and moist with a wonderful texture that is not as dry and fluffy as commercial pumpernickel. Great with cream cheese and makes great toast too! Please follow the instructions in the booklet for your bread machine for best results. The order in which to add ingredients may vary per manufacturer.
