8 10-inch flour tortillas (fat-free) 1 c black bean dip 1 c chopped lettuce 1 c diced tomato 1 1/2 T cilantro 1/2 c cheddar cheese (finely shredded) 1 c sour cream (reduced fat) 1 c salsa
Dice tomatoes. Chop cilantro and mix with the tomatoes. Chop lettuce. Place 2 tortillas between a napkin and warm in the microwave for 20 seconds on high. Warm black bean spread approximately 1 minute on high in the microwave. Place 2 tablespoons of black beans on tortilla. Top with a handful of lettuce and tomato. Top with 1 tablespoon of cheddar cheese. Roll. Garnish with a tablespoon of low-fat sour cream and salsa, if desired. Makes 4 servings. Serving size is 2 wraps.
