This is one was found in New Mexico. Please notice that this uses Chile powder, not chili powder. The Chile powder is actually ground red Chile peppers. Breakfast Red Chile Pork 1 clove garlic, chopped 1 large pork chop, cut into 1/2 cubes (you may use left over pork for this) 2-3 tablespoons Chile powder 1-2 teaspoons of cumin 1 cube chicken bouillon In a large pot, saute garlic in oil. Add pork and brown (if using leftovers, just warm). Add Chile, cumin, and bouillon. Add water to cover and simmer until mixture reaches a gravy-like consistency. This is good served over fried potatoes with fried eggs and topped with grated cheese
