I will be posting some loaf, burger or ground type chicken, turkey, any type of foul recipes to this section on the board and will be placing them in this sub category. If anyone else has any loaf, burger or ground type recipes, I would appreciate them being posted here also.
I will also be reposting some recipes already in this chicken/turkey category into the different sub categories, so if you don't see yours listed where it was, it has been moved to the sub category. Thank you.

Chicken Pot Stickers, (wonton dumplings)
1 1/2 pounds ground chicken 1/2 cup shredded green cabbage 1/3 cup chopped green onions (4 medium) 2 teaspoons chopped gingerroot 1 teaspoon sesame oil 1/4 teaspoon white pepper 1 small red bell pepper, finely chopped (1/2 cup) 1 egg white 1 package (10 ounces) round wonton skins 2 cups chicken broth 4 teaspoons soy sauce
Mix all ingredients except wonton skins, broth and soy sauce. Brush each wonton skin with water. Place slightly less than 1 tablespoon chicken mixture on center of skin. Pinch 5 pleats along edge of half of circle. Fold circle in half over chicken mixture, pressing pleated edge to unpleated edge. Repeat with remaining skins and chicken mixture. Spray 12" skillet with cooking spray and heat over medium heat. Cook 12 pot stickers at a time in skillet about 3 minutes or until light brown; turn. Add 1/2 cup of the broth and 1 teaspoon of the soy sauce. Cover and cook 5 minutes. Uncover and cook about 1 minute longer or until liquid had evaporated. Repeat with remaining pot stickers, broth and soy sauce. Makes 16 servings of 3 pot stickers each serving. Prep: 55 min Cook: 40 min

Grilled Greek Turkey Burgers
1 lb. ground turkey breast, or your choice of cuts 4 chopped black olives 1 tbsp. dried parsley 1 tsp. minced garlic 1/4 tsp. cinnamon 1/8 tsp. ground nutmeg 1/2 tsp. salt 1/4 tsp. ground black pepper 4 tbsp. non fat sour cream 4 pita breads 1 small diced cucumber 1/4 c. crumbled feta cheese toothpicks
Remove cooking grid from grill and spray with cooking spray. Prepare grill according to manufacturer's instructions. Use a medium bowl to mix the turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper. Shape into 4 burgers. Place on grill and cook 5 minutes per side, until meat is no long pink in center. Spread 1 tbsp. sour cream on each pita. Place cooked burger in the middle, on the bottom half of each pita and top evenly with cucumber cheese. Fold the sides towards the center, holding closed with a toothpick. Makes 4 servings.

Chicken Chili
1 lb. cooked, shredded chicken breast 1 14oz. can low salt stewed tomatoes, undrained 1 15 1/2oz. can pinto beans, rinsed and drained 3/4 c. mild picante sauce 2 softened, chopped chiles 2 tbsp. dried onion flakes 1/2 tsp. crushed red pepper 1 tsp. paprika 1 tsp. dried parsley 1 c. fresh or canned bean sprouts, drained and rinsed salt to taste
Combine the chicken, tomatoes, pinto beans, picante sauce, chiles, onion flakes, crushed pepper and paprika together in a large saucepan and bring to a boil. Reduce the heat, cover and let simmer for 5 minutes. Add the parsley and bean sprouts. Season to taste with salt. Makes 4 servings.

Method: Mix ground turkey, poultry seasoning, apple, onion, and celery together. For four 4 ounce burgers or 8 2 ounces burgers (the smaller size fits better on the English muffins). Grill burgers until internal temperature reaches 165 degrees, about 4-5 minutes on each size. In small bowl mix mayonnaise and cranberry sauce together. To serve, place burgers on English muffins, top with cranberry mixture and leaf of lettuce.

Apple Meatballs + Sauce
These glazed meatballs are moist and flavorful. To keep this in the lower fat area, use ground turkey breast.
1/2 lb. lean turkey sausage 1/2 lb. lean ground turkey 1 cup fine dry bread crumbs 1 medium apple, shredded 1/2 cup chopped onion 1 egg, beaten 1/2 tsp. ground sage 1 tbsp. vegetable oil 1 jar (10-oz.) currant jelly 1/2 cup water
Preheat oven to 350. In a bowl combine turkey sausage, ground turkey, bread crumbs, sage, apple, egg and onion in a bowl. Mix well. Form into 24 meatballs. Place on a baking sheet and bake for 10 - 15 minutes. Then place in a 2 quart casserole dish. Combine the jelly with the water and pour over the meatballs. Cover and bake for oven for 30 to 35 minutes. Spoon sauce over meatballs before serving. Makes 6 servings.

Two-flavor meatballs with a delicious sweet-sour sauce that is to die for. Serve over rice or have as thingytail meatballs, whichever you prefer.
Asian Meatballs with Plum Sauce for the meatballs: 1 lb ground chicken 1 lb mild pork sausage 1 medium onion, minced 1/2 red bell pepper, minced 2 teaspoons ground ginger 2 tablespoons soy sauce 1 large egg, lightly beaten for the sauce: 1 teaspoon ground ginger 1 cup light brown sugar 1 cup plum preserves 1 cup rice vinegar 2 tablespoons soy sauce 6 ounces pineapple juice 3 tablespoons cornstarch
Thoroughly mix together meatball ingredients and form into meatballs by the tbsp; brown on all sides and cook over medium-low heat until cooked through, 15-20 minutes; remove from heat.
Mix together sauce ingredients except cornstarch in a large pan big enough to hold sauce and meatballs (w/lid), cook over low heat until mixture is hot and simmering and mixed through.
Mix cornstarch with 5-6 tbsp water to form a slurry and whisk into sauce and stir until sauce is thickened and bubbly; fold meatballs into pan and mix sauce over them.
Top with lid and simmer 10-15 minutes over low heat. Serve with hot steamed rice, if desired. 36 to 48 meatballs 40 minutes (10 min prep, 30 min cooking)

Spiced Chicken Meatballs in Split Pea Pilaf
for meatballs: 2 pounds ground chicken 1 cup Fresh bread crumbs 2 eggs 1 1/2 teaspoons pumpkin pie spice 2 teaspoons salt 1/4 cup Fresh parsley, chopped and divided
for pilaf: 1 tablespoon Olive oil 1 onion 16 ounces Yellow split peas 7 cups Ccicken broth 1 cup dried apricots, diced 1 cup walnuts, chopped 1/4 cup chives, chopped 3 tablesppons mint, chopped 1/4 teaspoon salt 1/4 teaspoon black pepper
1. Preheat oven to 450 F. Spray jelly roll pan with non-stick vegetable spray. 2. In medium bowl, blend together ground chicken, bread crumbs, eggs, pumpkin pie spice, 2 teaspoons salt and half (1/8th cup) chopped parsley. Knead mixture with hands until it is smooth. Wet hands and form mixture into meatballs, each about 1 1/2 inches in diameter. Place meatballs on prepared jelly roll pan; bake in oven for 10 minutes. 3. In very large soup pot, warm olive oil over medium heat. Stir in onion; cook until softened, about 5 minutes. Stir in split peas, chicken broth, apricots and walnuts. Gently stir in meatballs. Increase heat to high; bring broth to a boil. Cover pan; reduce heat to low. 4. Simmer for 30 minutes, until split peas are tender. Stir in remaining parsley, chives, mint, salt and pepper. Makes 6 servings.

Ground Turkey Shepherd's Pie
Ingredients: 3 Large potatoes boiled and mashed buttermilk 1 1/2 lbs. ground turkey 5 cloves garlic minced 1 large onion chopped 1 tsp. ground sage 1 lb. frozen corn Salt and pepper
Preparation: 1. Boil potatoes and mash with buttermilk. 2. Saute ground turkey with a little butter, garlic and onions. Add sage and Salt and pepper to taste. Transfer to large casserole dish and spread evenly. 3. Top evenly with corn then spread mashed potatoes evenly on top. Bake at 350 for about 1/2 hour.

Mix up well. Form into 6 burger patties. Brush each burger with oyster sauce and barbecue, grill, or broil untill cooked through, about 5 minutes on each side. You do not want to have any pink showing on the meat. Place each on a bun and serve. MAKES 6 BURGERS

Here is a fabulous recipe for homemade sloppy joes using ground turkey. This recipe produces the best sloppy joes!
Turkey Sloppy Joes
1 pound ground turkey 1 small chopped onion ¼ cup chopped green pepper ½ cup chopped celery 1 can (10 ¾ oz.) condensed tomato soup ½ cup ketchup 2 tablespoons brown sugar 1 ½ tablespoons prepared mustard 2 tablespoons barbeque sauce ¼ teaspoon pepper 8 hamburger buns
In non stick skillet, brown ground turkey with onion, green pepper & celery. Drain grease, if necessary. Stir in remaining ingredients. Transfer to crock pot/slow cooker and cook on low for 4 hours.
**Be sure to taste test, some people may like to add more brown sugar for a sweeter sloppy joe.

Mom’s Goulash
1 large onion, chopped Olive oil 1 pound ground turkey Celery salt, Garlic powder, Pepper (season to taste) 2 Cans diced tomatoes 2 Cans tomato sauce 1 Can condensed tomato soup 3 cups (uncooked) Elbow Macaroni
Brown Ground turkey & onion in skillet. Combine all ingredients (except macaroni) in large stock pan. Let sauce simmer 1-2 hours. (In separate pan) Cook macaroni according to package. Remove sauce from stove and mix in the cooked macaroni.

Mix together: 1 lb. ground turkey 1/2 cup bread crumbs 1/2 cup milk 1 egg instant minced onion, garlic powder and pepper (to taste).
Put half the meat mixture into a baking dish or casserole, top with filling mixture:
10 oz. package chopped spinach 1 cup shredded or cubed cheddar 2 tbsp. parmesan cheese.
Top with the rest of the meat mix.
Bake at 350 for about an hour, maybe longer if using a deep casserole. Make sure the pink is gone from center. Serve with a sauce made of ketchup spiked with yellow mustard and brown sugar.

Zesty Turkey Meatballs
12 large cloves garlic, halved 3 tablespoons grated fresh garlic Several dashes bottled hot pepper sauce 1/2 cup apricot preserves 1/3-cup honey 2 teaspoons finely shredded lemon peel 1/2 teaspoon toasted sesame oil 1/3-cup rice vinegar 1 egg white, beaten 1/3 cup finely chopped green or red sweet pepper 1/3 cup quick cooking rolled oats 1 pound lean ground turkey 1/2-teaspoon salt
1. For sauce, in a blender container, combine garlic, ginger, hot pepper sauce, preserves, honey, lemon peel, sesame oil, and vinegar. Cover and blend until smooth. Set aside. 2. Preheat oven to 375 degrees F. In a medium bowl, combine egg white, sweet pepper, oats, salt, and 1/3 cup of the sauce. Add turkey; mix well. Shape into 1-1/2-inch balls. Arrange meatballs in a 15x10x1-inch baking pan. 3. Bake, uncovered, in preheated oven for 15 minutes or until thoroughly cooked. Brush with some of the remaining sauce and bake 5 minutes more until golden and glazed. Remove from oven, and drain on absorbent white paper towels. Cook remaining sauce in a saucepan over medium heat until heated through and slightly thickened. Serve sauce over meatballs. Bake: 20 minutes. Makes 36 meatballs.

Ingredients: 1 tablespoon butter 2/3 cup minced white onion 3/4 cup minced green onions 1/2 cup minced carrots 1/2 cup minced celery 1/4 cup minced green bell pepper 1/4 cup minced red bell pepper 2 teaspoons minced garlic 1 teaspoon salt 1 teaspoon ground black pepper 1/2 teaspoon cayenne pepper 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cumin 3 eggs 1/2 cup ketchup 1/2 cup half-and-half cream 1 1/2 pounds ground turkey 1/2 pound chicken sausage 3/4 cup fresh bread crumbs
2 tablespoons butter, divided 4 shallots, minced 1/4 cup minced red bell pepper 1/2 cup minced yellow bell pepper 1 sprig fresh thyme 1 bay leaves freshly ground black pepper to taste 1/2 cup half-and-half cream 2 tablespoons minced garlic 1 cup beef stock 1 cup chicken stock 2 roma tomatoes - peeled, seeded and chopped 1/2 cup ketchup salt and freshly ground black pepper to taste
Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan. 2. Melt butter in a large heavy skillet over medium heat. Saute white onions, green onions, carrots, celery, green and red bell peppers, and garlic until soft, about 10 minutes. Remove from heat. 3. In a large bowl, combine salt, black pepper, cayenne pepper, nutmeg and cumin. Stir in eggs, ketchup and half-and-half. Blend in vegetable mixture from skillet. Add ground turkey, chicken sausage and bread crumbs. Mix well with hands, then shape into a loaf. Place into greased 9x5 inch loaf pan. 4. Bake in preheated oven for 50 to 70 minutes, or until cooked through and nicely browned. Let rest for 10 minutes, then serve with gravy. 5. To make the gravy: Melt 1 tablespoon butter in a heavy skillet over medium heat. Saute shallots with red and yellow peppers until tender, about 10 minutes. Season with thyme, bay leaf and black pepper. Stir in half-and-half, garlic, beef stock and chicken stock. Increase heat to high, and boil uncovered until liquid is reduced by 1/4, about 10 minutes. Stir in tomatoes and ketchup. Simmer uncovered for 20 minutes. Stir in remaining tablespoon butter, and season to taste with salt and pepper. Strain gravy, discarding bay leaf and thyme before serving.

Ingredients: 3 pounds ground turkey 1/4 cup seasoned bread crumbs 1/4 cup finely diced onion 2 egg whites, lightly beaten 1/4 cup chopped fresh parsley 1 clove garlic, peeled and minced 1 teaspoon salt 1/4 teaspoon ground black pepper
Directions: 1. In a large bowl, mix ground turkey, seasoned bread crumbs, onion, egg whites, parsley, garlic, salt, and pepper. Form into 12 patties. 2. Cook the patties in a medium skillet over medium heat, turning once, to an internal temperature of 180 degrees F (85 degrees C).

Sweet 'n Sour Chicken Balls Servings: 4 Preparation Time: 20 Minutes Cooking Time: 20 Minutes 1 pound(s) , Ground Chicken 3 tablespoon(s) , Tonkatsu Sauce 1/4 cup(s) , Bread Crumbs 1 large , Egg Beaten 2 cup(s) , Sweet and Sour Sauce 8 ounces , Pineapple Chunks 1 medium , Green Bell Pepper Sliced 6 medium , Mushrooms Sliced Instructions: Mix the ground chicken, steak sauce, bread crumbs and beaten egg together. Form the ground meat mixture into small meatballs.
Heat a skillet over medium heat. Cook the meatballs until thoroughly heated and browned. Remove from skillet; drain on paper towels.
Prepare the sweet 'n sour sauce. Add the pineapple chunks, and green pepper and mushroom slices to the sauce.
Place the meatballs in a serving bowl and pour over them the sweet 'n sour sauce combination, allowing your guests to use toothpicks to pick up the meatballs. - Or - Run two or three meatballs thru with a bamboo skewer, and use the sauce as a dip.
