[Our_Recipe_World] Chicken Lo Mein
Chicken Lo Mein
2 Tbsp. oil (I used canola) 1 lb. boneless -- skinless chicken breasts, cut in strips 2 cups chicken broth 2 Tbsp. soy sauce 1/2 tsp. sugar 1/4 tsp. ground ginger 1/2 tsp. garlic powder 1 package frozen mixed veggies (I used a stir-fry mix: peppers -- (16 oz.) pea pods, broccoli, etc.) 4 oz. angel hair pasta -- uncooked 2 Tbsp. water mixed with 2 tsp. corn starch
Heat oil in a large skillet and stir-fry chicken for about 3 minutes. Stir in chicken broth, soy sauce, sugar, ginger, garlic powder and veggies. Bring to a boil and stir in pasta. Reduce heat, cover and cook for 6-8 minutes until pasta is cooked. Blend water and corn starch and add to chicken. Stir until thickened and serve.
