Spiced Blueberry and Maple Cornmeal Cobbler
4 cups blueberries 1 cup plus 2 TBS white sugar 1 TBS quick cooking tapioca 2 tsp lemon zest 1 tsp cinnamon 1/2 tsp nutmeg 1 cup flour 1/2 cup cornmeal 2 tsp baking powder 1/2 tsp salt 1/2 cup plus 2 TBS butter 1 cup confectioners sugar 1 large egg 3/4 cup buttermilk 2 TBS maple syrup
Heat oven to 375*F. Combine berries, sugar, tapioca, zest, cinnamon, and nutmeg in shallow 10" dish or iron skillet. Combine flour, baking powder, cornmeal, soda and salt. Cream together 1/2 cup butter with icing sugar til fluffy. Beat in egg, buttermilk Stir into dry ingredients. Pour over berries. Bake 35 - 40 minutes til top springs back when touched. Raise oven to broil. Brush crust with maple syrup and broil one minutes til glazed lightly. Serves 6
