Cherry Hazelnut Oatmeal Crumble
Serves 6 - 8 Oven 375*F
2 - 16 oz cans pitted tart cherries, drain and reserve 1 cup juice 1- 1 1/2 cup sugar 1/3 cup cornstarch pinch salt 1/4 tsp almond extract 3/4 cup flour 1/4 cup brown sugar 1/2 cup oatmeal 1/2 cup coarsly chopped hazelnuts 8 TBS butter (1 stick)
Combine reserved juice with 3/4 cup sugar, cornstarch and salt. (Mix together sugar and cornstarch first) Cook over medium low heat til thick and bubbly. Remove from heat and stir in cherries, extract and 1/4 cup sugar to taste. Spoon into a 1 1/2 QT oval baking dish. Toss together flour, remaining sugar(1/2 cup), oatmeal and nuts in bowl. Cut in butter til resembles coarse crumbs. Sprinkle over filling. Bake 35 - 40 minutes til bubbly and golden brown.
