2 cups (480 ml) biscuit/baking mix (such as Bisquick) 1/2 cup (120 ml) cold water 8 oz (224 g) sliced Swiss cheese 1 pound (450 g) sliced bacon, cooked and crumbled 4 eggs, lightly beaten 1/4 cup (60 ml) milk 1/2 teaspoon (2.5 ml) onion powder
In a bowl, combine the biscuit mix and water; stir 20 strokes. Turn onto a floured surface; knead 10 times. Roll into a 14-inch x 10- inch (35-cm x 25-cm) rectangle. Place on the bottom and 1/2 inch (12 mm) up the sides of a greased 13x9-inch (33x23-cm) baking dish. Arrange cheese over dough. Sprinkle with bacon. In a bowl, whisk eggs, millk and onion powder; pour over bacon.
Bake at 425 F (220 C) for 15-18 minutes or until a knife inserted near the center comes out clean. Cut into squares; serve immediately.
Makes 12 servings.
