This was a long time favoriate diner in Dallas, Tx. They had one of the best coconut pies around. It was a frequent stop of politicians including a friend of mine who ran for Governor a few years back. I contacted his staff and asked if Jim Mattox would like the recipe for the pie. After the election he called me and asked for it.... it's a good one I got from the chef who has since passed on. Brownie's Diner Coconut Meringue Pie 3 eggs, separated 6 oz sugar 6 TB butter 1 pint milk 1 tsp vanilla 1 oz cornstarch 9 " pie shell 5 oz sugar for meringue coconut For Pie: Combine egg yolks, milk, sugar, vanilla and butter. Cook till about to boil and then add cornstarch dissolved in a little cold water. Cook until very thick. Mix in coconut to taste, put in cooled pie shell that has been pre-cooked. After cooled top with merinque. For Merinque: Make with the 3 egg whites and 5 oz sugar. Beat till stiff making sure sugar is dissolved. Top with toasted coconut.
