Start with 4 boneless, skinless chicken breasts. Cut into 1-inch pieces. Combine 1/2 cup lime juice, 1 teaspoon black pepper, 1 teaspoon chili powder and 1 Tablespoon olive oil. Pour this over chicken breast pieces. Toss to coat and let this soak until you are ready to cook.
Then in another bowl, make salsa by combining 1 cup (thawed) frozen corn, 1 tomato, which has been chopped into small pieces, 1/4 cup chopped bell pepper, 1/4 cup chopped onion (purple, if you have it), 1 Tablespoon lime juice, and 1/2 teaspoon ground cumin.
The chicken can be cooked in a non-stick pan, your Wok, or grilled on a George Foreman-type grill. Just put chicken in pan, Wok or on grill; cook and toss about 7 minutes or until cooked through. Place cooked chicken pieces on a serving platter and smother with your homemade salsa.
This can be served with a side of rice, baked potato or a nice green salad.
