I am looking for a delicious melt in your mouth shortbread recipe. I tried one over the weekend & it is 'flat' tasting. I am a little disappointed. It was: 1 c. butter 1/2 c. icing sugar 3 c. flour and then you beat it for 10 minutes. They are definitely melt in your mouth! If you add more icing sugar would that help add more flavor? And I have seen some recipes with cornstarch in them - what is the purpose of that?

HI! I made a shortbread cookie this past week and I wasn't real thrilled with it either. It tasted more like a cut up cookie than shortbread. The cookie was still good.. I was just looking for something that tasted exactly like shortbread. I was wondering if the icing sugar was what made it taste more like cut up cookies because shortbread isn't made with that.
I wonder what would happen if you just took a shortbread recipe and made it in the shape of cookies...
