Strawberry Fluff 2 (3 ounce) packages strawberry flavored gelatin 1 (16 ounce) package cottage cheese 1 (8 ounce) container frozen whipped topping, thawed 1 (20 ounce) can crushed pineapple, drained Directions: In a mixing bowl, combine the gelatin mix, cottage cheese, whipped topping and pineapple. Mix together well, refrigerate until chilled and serve. Note: This can be made with sugar free gelatin, fat free cottage cheese, and fat free cool whip for a lower calorie count. This is an EASY and quick treat! Makes 8 to 10 servings. HINT: Especially if you were assigned to bring the jello and have to travel with it, here is an easy trick to make your jello HOLD its shape... Take the dry jello mix and add in 1-2 packets of KNOX gelatin. Stir it into the jello very throughly, so that none of its white color shows. Then proceed with any of your recipes, adding the hot water or other ingredients after this point. Unless 'direct sunshine' hits this, your jello should arrive in fine shape! I was so happy to discover this trick, and one year got carried away with the KNOX. Thought more in comparison to the amount of jello would be even better, and added in a 4th packet to what should have been a recipe needing only two... Rather embarassing to watch the relatives and guests trying first to get the jello to stay on a spoon long enough to capture it to their plates, and then more moments watching them try to catch a bite to eat. That jello was SO springy, it had a life of its own! We had some good laughs, but I learned the lesson that more is not always better!!! Always with my best, Baking Bud
