Lemon/Blueberry Loaf
1/2 cup (125ml) butter, softened 1 cup (250ml) white sugar 2 eggs 1-1/2 cups (375 ml) all purpose flour 1/4 teaspoon (1 ml) salt 1 teaspoon (5 ml) baking powder Grated rind of 1 lemon 1/2 cup (125 ml) milk 1 cup (250 ml) blueberries TOPPING 1/4 cup (50 ml) sugar Juice from 1 lemon Preheat oven to 350F(180C)
Cream butter and stir in sugar a bit at a time. Beat in the eggs In another bowl, combine flour, salt, baking powder and lemon rind. Add this mixture alternately with the milk to the butter mixture. Fold in the blueberries. Bake in a loaf pan for 1 hour. Remove from pan. Mix together the sugar and lemon juice for topping and spoon over while loaf is still hot.
