RICH CHOCOLATE CHEESECAKE
1-1/2 Cups chocolate wafer crumbs
1/4 teaspoon ground nutmeg
1/2 cup butter, melted
2 8oz. packages cream cheese, softened
3/4 cup sugar
3 eggs
1 8 oz. carton commercial sour cream
6 1 oz. squares semisweet chocolate, melted
1 tablespoon plus 3/4 teaspoon cocoa
1-1/2 teaspoon vanilla extract
1/2 cup whipping cream, whipped
Additional whipped cream, maraschino cherries, chocolate curls and
slivered almonds (optional)
Combine chocolate wafer crumbs, butter and nutmeg, mixing well.
Press mixture for crust into the bottom of a 9-inch springform pan; chill for at least an hour.
Beat cream cheese at low speed until light and fluffy, gradually adding sugar.
Add eggs, one at a time, beating well after each addition.
Stir in sour cream, melted chocolate, cocoa and vanilla; mix well.
Gently fold in whipped cream, spoon into prepared pan.
Bake at 300 degrees for one hour.
Turn off the oven and let cake remain inside with door closed for another half-hour (30 minutes).
Open door and allow the cake to cool inside the oven for an additional half-hour.
Refrigerate 8 hours.
Remove the side of the springform pan and garnish as you wish. Enjoy...!
