Makes 24 servings
2 pounds fig white, dried 8 cups bread crumbs soft 4 cups brown sugar 1 cup sugar granulated 1 pound ground suet 3 tablespoons molasses 4 tablespoons flour 3 teaspoons nutmeg grated 4 lemons juiced 8 eggs
Grind figs in meat grinder. Mix with all other ingredients except eggs. Beat egg yolks and egg whites separately. Stir yolks into fig mixture, then fold in whites. Thoroughly grease five 1-pound cans and fill 2/3 full. Steam for 3 hours. If pudding is made ahead, let cool completely and then refrigerate.
