To make a single layer Bunny Cake: use two round pans. To construct and serve, turn a large jelly roll pan over and cover with aluminum foil or any large flat serving platter. Place one uncut cake about 2/3s the way down on your server for the head. Then cut the other round cake into 3 pieces, like this: () () [If you can imagine, there are two ears on either side and the center piece turned sideways becomes a bow tie for under the bunnies head] place the 3 pieces in their appropriate positions on your server. Frost with white icing and coconut. [Here's were you can make it 3 dimensional by adding a snout, eye brows, a knot in the bow tie, etc. with your icing] Pink food colored icing works inside the ears and for the nose. I like to use green-died coconut [like grass] to cover the exposed tray. Add candy eyes and whiskers, use your imagination and have fun...and don't forget to decorate the bow tie. This comes out so cute
