6 medium-size cooked sweet potatoes or 1-pound can sweet potatoes
I/2 teaspoon salt
1/4 cup butter
I/2 cup maple-flavored syrup
1/2 teaspoon grated orange rind
Cut sweet potatoes in half and arrange in buttered baking dish.
Sprinkle with salt. Brown butter slightly in small skillet. Add
syrup and orange rind; simmer until slightly thickened. Pour sauce
over sweet potatoes. Bake at 375 degrees for 20 minutes, basting
frequently.
