Our family just used this recipe three times in the last two weeks and the roasts turned out super each time. Hope this helps. Alis from Washington
Old-Fashioned Roast Beef One 4 lb. or bigger beef roast (we used prime rib)
Season with a rub of your choice. Preheat the oven to 400°. Place roast, uncovered, in the preheated oven. Turn oven off after 1 hour but do not open oven door. Forty minutes before dinner, turn oven on again to 375°. Roast will be medium-rare in center and well done around edges. On a meat thermometer it should register 150° for medium-rare.
