I use this recipe when I make these cookies for the holidays.
Soft Molasses Cookies 1 cup brown sugar 1-1/4 cups shortening 1 cup boiling water, buttermilk or coffee (I use coffee) 4 teaspoons baking soda 1 cup molasses 1 teaspoon ginger 1 teaspoon cloves 1 teaspoon cinnamon 5-1/2 to 6 cups flour
Cream sugar and shortening. Add boiling water (buttermilk or coffee) in which the baking soda has been dissolved and stir well. Add molasses, stir thoroughly. Combine spices and flour and add to mixture in bowl to make fairly stiff dough. Drop by tablespoons onto greased baking sheets, two inches apart. Bake at 375° for 12-15 minutes or until brown. Remove to racks to cool. Makes about 5 dozen cookies. Enjoy!
