1 c. quick rolled oats 1 1/2 c. boiling water 1/2 c. butter or margarine 1 c. brown sugar 1 c. white sugar 2 eggs, beaten 1 1/2 c. flour 1 tsp. soda 1 tsp. cinnamon
TOPPING: 6 tbsp. melted butter or margarine 1/2 c. brown sugar 1/2 c. coconut 1/2 c. chopped nuts (optional) 1/2 tsp. vanilla
Pour boiling water over oats; stir and cool. Cream together butter, brown sugar, white sugar, eggs. Sift together flour, soda, cinnamon and add to creamed mixture. Add oats; mix well.

Hi, Julie! This looks wonderful--I was wondering what the rest of the baking instructions were. My MIL wants our Christmas family potluck dinner this year to be made with Amish/PA Dutch recipes, and this sounded like a good choice for a dessert to me. I was hoping you might have the rest of the baking instructions for me so that I could make it to take this year. My husband's family is of PA Dutch/Mennonite/Amish descent, so the menu won't be a stretch for my MIL. I, on the other hand, need recipes. I'm so grateful for this recipe board!!!! Hi Stargazer, I am sorry your question was not answered in time for your family holiday celebration. Here is a link to a similar recipe for Oatmeal Cake. It would appear the cake is baked in a 13 x 9 x 2" cake pan. Bake at 350*F for 30 minutes. Hi, Shortcake!
Thanks for the reply and the link--I'll check it out. No problem about missing the holiday. I ended up using an Amish Maple Cream Pie recipe from an Amish cookbook that I had instead. My husband loves maple syrup, which this recipe called for, so it was a big hit with him. Thanks again for your help. I'll have to make this cake for my family--it really sounds yummy!
