I make these from the extra bell peppers and hot hungarian peppers in my garden and freeze them.
Stuffed Peppers
1 lb ground beef, very lean 1 t salt 1/4 c chopped celery 1/4 c chopped onion 1 small minced hot pepper 1 c tomato juice 1/2 c dry minute rice dash pepper 4 large green peppers
Mix all except peppers . Slice tops off peppers and remove seeds. Stuff with mixture.
Sauce: 2 cans tomato soup 1 can of water or tomato juice 1 tsp italian seasoning
Pour sauce over stuffed peppers and bake for 1 1 /2 - 2hours at 350 or cook in crockpot on low for 6 hours.
