For those who are egg intolerant - I found these in my collection.
Eggless, Milkless, Butterless Cake
2 C Water
1 C Sugar
1 C Shortening
1 Tsp Cloves
1 Tsp Cinnamon
1 Tsp Salt
1 Pkg Raisins
3 C Flour
1 Tsp Soda Water
2 C Walnuts -- Chopped
1. Boil raisins, water, sugar and shortening 5 minutes; cool.
2. Add spices, soda, flour and mix well.
3. Add chopped walnuts.
4. Bake at 350 degrees in two loaf pans for 1 hour. Needs no icing.
The longer the cake is kept, it seems the more moist it is. Should be wrapped in wax paper if keeping for quite a while.
MILKLESS, EGGLESS & BUTTERLESS COCOA CAKE
6 heaping tbsp. cocoa
2 c. sugar
3 c. flour
2 c. water
1 c. oil
2 tsp. salt
2 tbsp. vinegar (white)
2 tsp. baking soda
Heat oven to 350 degrees. Grease and flour 9 x 13 inch pan. Mix flour, sugar, cocoa, soda and salt in large bowl. Add rest of ingredients and beat until well blended by hand. Pour into prepared pan and bake about 45 to 50 minutes or until done.
Eggless Chocolate Cake
2 c. soft wheat flour
1 c. sugar
2 tbsp. cocoa
1/2 tsp. salt
1 tsp. soda
1/3 c. shortening or 1/2 c. butter
1 c. buttermilk or sour milk
Sift dry ingredients together. Beat in shortening and milk until smooth. Pour into greased 8 inch square pan. Bake at 350 degrees.
Eggless "Saucy" Chocolate Cake
Sift together: 1 c. sifted flour
3/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
2 1/2 tbsp. powdered cocoa
Combine and add to No. 1 1/2 c. milk
1 tsp. vanilla
1 tbsp. butter, melted
Add 1/2 cup chopped pecans. Mix No. 1,2 and 3. Pour into 8 x 8 x 2 greased and floured pan.
Combine: 1/2 c. sugar, granulated
1/2 c. light brown sugar, firmly packed
2 tbsp. cocoa
1 c. boiling water
Pour mixture over cake batter. Bake at 350 degrees for 40 to 45 minutes. Cool and turn out on serving dish. Garnish with whipped cream. Serves 8.

2 c. sugar
1/2 c. shortening
2 level tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
2 tsp. cloves
2 c. water
4 scant c. flour
2 c. raisins
Cook all together until boiling, except flour and baking powder. Let cool and add the rest.
Applesauce Cake (Eggless)
2 c. flour
1 c. sugar
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
2 tsp. baking soda
1 c. raisins
1 c. chopped nuts
1/2 c. melted butter
16 oz. applesauce
Heat oven to 350 degrees. Grease and flour a 9 x 9 x 2 inch pan. Sift together dry ingredients. Add raisins, nuts, butter, and applesauce. Blend well. Pour into pan and bake 45 to 50 minutes.
Crazy (Eggless) Chocolate Cake
In an ungreased 9x9 (or 8x8) pan, put: 1 c. sugar 3 tbsp. cocoa 1 tsp. baking soda 1/2 tsp. salt Mix together. Make 3 impressions and put in: 1 tsp. vanilla 1 tbsp. vinegar Over this pour: Mix with a fork until wet. Bake at 350 degrees for 30 minutes. Note: Is excellent in the microwave. In a microwaveable pan, bake 7 minutes. (Use paper cup in center to even baking.)
Eggless Fruit Cake
10 ounces self-raising flour
1 teaspoon mixed spice
1 pinch salt
1 tsp bicarbonate of soda
1/2 pint well-strained weak tea
3 ounces margarine or cooking fat
3 ounces sugar
3 ounces dried fruit
Grease and flour a 7" cake tin. Sift the flour, spice, salt and bicarbonate of soda together.
Pour the tea into a saucepan, add the margarine or cooking fat, sugar and dried fruit. Heat until the fat and sugar melt then boil for 2-3 minutes.
Allow to cool slightly, pour on to the flour mixture, beat well and spoon into the tin.
Bake in the centre of a moderate oven for 1 1/2 hours
Eggless Fruit Cake
2 c. sugar
1 c. oleo
2 c. buttermilk
2 heaping tsp. soda
1 tsp. each cloves, allspice, cinnamon and nutmeg
3 1/2 c. flour
2/3 c. raisins
2/3 c. chopped dates
1/2 tsp. salt
1 c. chopped black walnuts or pecans
1 1/2 c. candied fruit
May add 1/2 tsp. black walnut extract
Cream sugar and oleo. Sift dry ingredients together. Mix raisins, dates, nuts and candied fruits and put 1 cup flour over fruit nut mixture. Add buttermilk to creamed mixture. Mixing by hand, add flour and spice mixture and add fruit and nut mixture. Line tube pan with greased brown paper. Bake at 300 degrees for about 1 1/2 hours. Leave plain but real good too with caramel. --FROSTING:--
1/2 c. (1 stick) oleo
1/4 tsp. salt
1 c. brown sugar
6 tbsp. milk
2 1/2 c. powdered sugar
Melt oleo and stir in brown sugar and salt. Bring to a boil and boil 2 minutes. Stir constantly. Remove from heat add the 6 tablespoons milk. Put back on fire and bring to a full boil. Set aside and cool 20 minutes. Stir in powdered sugar and beat until smooth and spread on cake.
