Apple Roll-ups
Tender crepes filled with cinnamon-spiced apples, Cheddar cheese and Reddi-wip
Cooking Technique:Boil-Simmer Prep Time:20 Cooking Time:10-20 minutes Yield:6 servings (1 crepe each)
Ingredients
2 tablespoons all-purpose flour 2 tablespoons granulated sugar 2 tablespoons brown sugar 1/2 teaspoon ground cinnamon 4 medium Granny Smith apple, or other tart cooking apples, peeled, chopped (about 4 cups) 1/3 cup orange juice 1 tablespoon Fleischmann's® Original Margarine-stick 1-1/2 teaspoons lemon juice 6 prepared crepes (9 inch) 3/4 cup (3 ounces) shredded Cheddar cheese Reddi-wip® Original Whipped Light Cream
Directions
Mix flour, granulated sugar, brown sugar and cinnamon in small bowl; set aside. Combine apples and orange juice in medium saucepan. Bring to a boil over high heat. Reduce heat to low; cover. Simmer 3 to 4 minutes, or until apples are tender, stirring occasionally. Add Fleischmann's, lemon juice and the flour mixture; mix well. Cook over medium heat until thickened and bubbly, stirring constantly. Spoon about 1/3 cup of the apple mixture down center of each crepe; sprinkle each with 2 tablespoons cheese. Dispense about 2 tablespoons Reddi-wip next to apple mixture on crepe; roll up. Place 1 crepe, seam-side down, on each of 6 individual serving plates. Top with additional Reddi-wip, if desired.
