Pears Poached In White Wine
4 ripe pears, peeled but leave stem attached 2 cups water 1 cup white wine 1 cup sugar 1 cinnamon stick 1 strip lemon rind
Remove core from pears with an apple corer, leaving the pear whole. In a large pan, add water, wine, sugar, cinnamon stick, and lemon rind; bring to a boil. Add pears and poach gently from 5 to 10 minutes, depending on the size of the pear. The pears should be firm but tender. Carefully lift pears out of the liquid with a slotted spoon; set aside.
Boil liquid rapidly for 5 to 10 minutes or until it thickens. Spoon over pears and serve. Serve warm or chilled.
