Microwave Pickles
1 medium cucumber, sliced thin 3/4 cup sugar 1 tsp salt 1/2 tsp mustard seed 2 small onions, sliced thin 1/2 cup vinegar 1/2 tsp celery seed
In a large microwave safe bowl, combine all ingredients. Microwave uncovered on high for 4 minutes; stir. Cook 3 or 4 minutes longer or until mixture is bubbly and cucumbers and onions are crisp-tender. Cover and refrigerate 4 hours before serving. You can make a batch of these flavorful pickles anytime without the work of traditional canning methods. Yield 4 to 6 servings ;D
