Chili Con Carne Source: Betty Crocker's Dinner In a Dish Cookbook (1965)
8 pounds ground beef 8 cups chopped onion 8 cans (1 pound 12 ounces each) tomatoes 8 cans (1 pound each) kidney beans, drained (reserve liquid) 2 cans (15 ounces each) tomato sauce 1/4 cup sugar 6 Tablespoons chili powder 3 Tablespoons salt
Cook and stir ground beef and onion in large heavy roaster until meat is browned and onion is tender. Stir in tomatoes, liquid from kidney beans, tomato sauce, and seasonings. Simmer uncovered 1 hour 15 minutes. Add beans and simmer uncovered 15 minutes, or until of desired consistency. Stir occasionally. Makes 40 servings, 1 1/2 cups per person.
