HELP....I have to know how much brisket to prepare for 250-300 people......what is the waste from an uncooked brisket....is it about 1/2? I am planning an average of 3.5 oz a person because of that large number many are children and they will not eat that much and then I can plan on what they do not eat to be available for the older kids and adults......it will be served to them....not a GET YOUR OWN type of deal. I have kind of figured this way......3.5 x 275 / 16 = # of lbs. cooked and ready to serve....now how much will I need to get of raw, med. fat content brisket and I have access to several roasters to cook them slowly....and I have until May 10th to get this done. OR I also have a way to get already prepared and sliced brisket....and I think I have that pretty well figured out...using the same formula above......if I have to cook it all that is what I am concerned about.....think I will have quick access to bbq sauce if I should run out....but I am stumped as far as how much uncooked brisket I will need.
