2/3 cup I Can't Believe It's Not Butter! Spray 2 cups brown sugar 1/2 cup corn syrup, light or dark 1 teaspoon salt 1 teaspoon vanilla 1/2 teaspoon baking soda 4 ounces peanuts, optional 6 quarts popped popcorn
--------------------------------------------------------------------------------
In a 3-quart saucepan, combine margarine spray, brown sugar, corn syrup and salt.Bring to a boil, stirring constantly. Then boil, without stirring, for 5 minutes over medium heat.
Remove from heat and stir in vanilla. Add baking soda and stir vigorously (the consistency of the mixture will change).
Carefully pour over popped corn and peanuts, stirring and mixing well. Turn into 2 or 3 large baking sheets, leaving enough room to stir the mixture.
Bake at 250 degrees for 1 hour, stirring well every 15 minutes. For uniform crisping, mixture must be completely turned during stirring. Remove from oven and cool completely, breaking any large masses apart. Store in airtight container.
