Vinegar Pie In the old days when lemons were too expensive, people often made this pie as a replacement for lemon pie. Try it and see what you think. 1 cup sugar 3 egg yolks 4 tablespoons flour ΒΌ cup cider vinegar 2 cups boiling water 1 pie shell, baked Meringue: 3 egg whites tablespoons sugar 1/3 teaspoon salt Beat egg yolks until thick. Add sugar, flour and salt, mix well. Slowly add the boiling water. Put mixture into a double boiler, add vinegar and cook about 4 minutes or until thick. Pour mixture into the baked pie shell. Preheat oven to 325 degrees. Beat egg whites, gradually adding the sugar. Beat until stiff. Spread meringue over pie all the way to the edges. Bake for approximately 20 minutes or until meringue is browned.
