GINGERSNAPS
This is an old recipe I got from my mother-in-law. It was her mother's recipe so I expect it is about 90 years old or more. The original recipe called for bacon fat instead of shortening. (delicious made this way if you can afford the cholesterol!!)
1 cup molasses ½ cup shortening
Boil a few minutes on top of the stove. Take off the stove and add 1 Teaspoon baking soda. Let cool. Add: 1 tsp ginger 1 tsp salt 1 cup flour Stir all in well. Wrap and chill overnight. Next morning, roll as thinly as you can on a lightly floured board. Cut into circles and bake in a hot oven for a few (2 ½ minutes) Watch very carefully as these really burn easily. They are well worth the effort.
