Fish Sandwich with Orange-Ginger Mayonnaise
Thanks to your microwave oven and quick-cooking fish, these saucy sandwiches are ready in the blink of an eye. Source: Better Homes and Gardens
4 fresh or frozen fish fillets (such as cod, orange roughy, or pike), 1/4 to 1/2 inch thick (about 1 pound) 2 tablespoons margarine or butter 1/4 cup fine dry bread crumbs 1/4 teaspoon ground ginger 1/8 teaspoon salt 1/8 teaspoon ground red pepper 4 hamburger buns or Kaiser rolls, split and toasted Lettuce leaves 1 recipe Orange-Ginger Mayonnaise
1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. In a microwave-safe custard cup micro-cook margarine or butter, uncovered, on high for 40 to 50 seconds or until melted; set aside. 2. In a small bowl combine bread crumbs, ginger, salt, and red pepper; set aside. Place fillets on waxed paper. Brush tops and sides of fish with melted margarine or butter; coat tops and sides with crumb mixture. 3. Arrange the fillets, crumb side up, in an 8x8x2-inch microwave-safe baking dish. Turn under any thin portions of fillets. Cook, uncovered, on high for 4 to 7 minutes or until fish flakes easily with a fork, giving the dish a half-turn after 3 minutes. 4. Serve fish on toasted buns with lettuce leaves. Top with Orange-Ginger Mayonnaise. Makes 4 servings. Orange-Ginger Mayonnaise: In a small bowl combine 1/2 cup light mayonnaise or salad dressing, 2 teaspoons orange marmalade, and 1/2 teaspoon ground ginger.
