Lemon Slice can be adapted to Raspberry Slice which is my favorite.
Raspberry Slice
Roll biscuit pastry to fit slab pan. Spread with two tablespoons of raspberry jam. Cover with a topping made by beating one egg with 1/2 cup caster sugar and thickening with 1/2 to 1 cup of coconut. Bake for 30 minutes. Cut when cold.
