SMOKED SALMON & SWEET POTATO FRITTATAS
Prep time: 15mins Cooking time: 20-30mins Serves 6 you could change the salmon for other smoked fish... and the sweet potatoes for either pumpkin or potato or a mix of both....
INGREDIENTS
200g Smoked Salmon, cut into small pieces 300g sweet potatoes, peeled & roughly chopped 2 tbs melted butter 1/2 cup fresh breadcrumbs 3 green onions, finely chopped 2 tbs garlic, finely chopped 2 tbs parsley, finely chopped 5 lge eggs, lightly beaten 1 tbs sour cream
METHOD..
Pre-heat the oven to 200°C [400.F] 1. Boil sweet potatoes until just tender. Drain immediately & cool. 2. Butter a 6 x jumbo cup muffin pan & add in the breadcrumbs to coat the bottom. Bake for 4mins until toasted. 3. Mix together remaining ingredients in a bowl & season to taste with salt & freshly ground black pepper. 4. Distribute potato evenly between the muffin pans. 5. Pour in egg mixture evenly over potato. Bake for 20-30mins until firm. 6. Cool a little in pan before turning out. Serve hot or cold with salad.
