cauliflower soup
1 x head of cauliflower chopped roughly ~ using stalk not leaves... 1.1/2 litres [3 pints] chicken stock... 1 x large onion chopped roughly... 2 x sticks celery chopped... 2 x large potatoes chopped roughly 250 ml. [1cup] cream... salt and pepper... 1 x cup grated emmenthaler cheese [swiss] grated... 1 x cup sour cream ...
place cauliflower ~ stock ~ onion ~ potatoes ~ celery in saucepan and bring to the boil ~ simmer for 20 mins.. or until all vegetables are very tender... using a blender or a kitchen wand.. blitz the soup smooth add the cream and the salt and pepper to taste... serve hot ~ with the cheese and sour cream in bowls in the centre along with crusty bread...
