Ham, Eggs and Cheese Crescent Pizza
1 (8 oz.) pkg. refrigerated crescent rolls
1/4 cup chopped onion
1 tablespoon butter, melted
1 cup finely chopped cooked ham
1 cup (4 oz.) shredded Swiss cheese
4 large eggs, lightly beaten
1/2 cup milk
1/2 teaspoon salt
1/4 teapoon pepper
1 tablespoon chopped chives
Unroll crescent rolls, and place in an ungreased 13x9x2-inch pan. Press 1/2 inch up sides to form a crust; seal perforations. Bake at 375° for 5 minutes on lower rack of oven; set aside.
Cook onion in butter in a small skillet over medium heat, stirring constantly, until crisp-tender; stir in ham and mix thoroughly. Spoon mixture over dough. Sprinkle with shredded cheese. Combine eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with chopped chives. Bake at 350 degreees for 25 to 30 minutes or until set. Serve immediately. Yield: 6 to 8 servings
SIDE DISHES:
Crisp Oven Browned Potatoes
3-4 raw potatoes, peeled and sliced
1/2 cup melted butter
salt and pepper
Heat oven to 350 degrees. Place sliced potatoes in ungreased, shallow 9x13 pan. Sprinkle with salt and pepper to taste. Drizzle melted butter over potatoes. Bake at 350 degrees 50-60 minutes until tender and brown. Baste occasionally with butter in the pan. Serves 4. Increase it to your needs!
SAUTEED APPLES AND BACON
6 to 8 slices bacon
6 to 8 tart cooking apples, peeled, cored, and cut into 1/2 inch cubes (should be about 4 C.)
3 T. brown sugar
Grating of fresh nutmeg
Fry the bacon until crisp. Keep it warm in the oven while the apples cook.
Discard all but 2 tablespoons of the bacon fat. Saute the apples uncovered in the remaining bacon fat over high heat for 6 to 8 minutes, until they become slightly translucent. Sprinkle with the sugar and nutmeg. Arrange the apples on a platter, surrounded by the bacon. Serves 4 to 6.
