Quiche with Potato Crust
4 c Frozen Hash Browns; thaw 1/4 c Melted butter 1 c Shredded pepper cheese 1 c Shredded Swiss cheese 1 c Diced ham 1/4 cup sweet Maui onion, or other mild types (optional) 2 Eggs 1/4 ts Salt 1 c Half & half
Directions: Grease a 9" plate with butter flavor Crisco. Press thawed Hash Browns between paper towel to absorb moisture. Put in dish. Brush with melted butter, including edges. Bake at 425 F for 25 minutes.
Remove and fill with shredded cheese, ham, onions, beaten eggs, salt, and cream. Bake at 350 degrees for 30 to 40 minutes.
