1 sheet frozen puff pastry 3/4 cup ground cooked smoked ham 1/2 cup shredded Swiss cheese 1 tablespoon chopped chives 1 egg, beaten 1/2 cup milk 1 tablespoon dry sherry
Defrost puff pastry 20 minutes, then unfold. Cut dough with a sharp knife in to 2 inch squares. Press a piece of dough in to mini muffin cups, forming a ridge at the top. Preheat oven to 375 degrees. Lightly toss together ham, cheese and chives. Place 2 tablespoons ham mixture in each pastry lined cup. Combine egg, milk and dry sherry and slowly pour over ham mixture. Bake 25 to 30 minutes. Cool slightly and remove from pan.
Makes about 24 miniature quiches.
