Scalloped Eggs and Bacon
¼ cup chopped onion 2 TBs butter 2 TBS flour 1 ½ cup milk ½ cup shredded cheddar cheese ½ cup shredded swiss cheese 6 hard boiled eggs, sliced 10 to 12 slices bacon, cooked crisp and crumbled 1 ½ cup crushed potato chips
Saute onion in butter til tender. Stir in flour. Stir in milk. Cook and stir until thick and bubbly. Cook for 1 to 2 minutes longer. Add cheeses. Stir to melt. Place half the eggs in a 10X6X2 inch baking dish.Pour on half the cheese sauce. Sprinkle with half the bacon and half the chips. Repeat layers. Bake at 350*F for 15 to 20 minutes. Serves 6.
