Asian Coleslaw Serves 4 - 6 4 tbs lemon grass, ginger and garlic vinegar,* 2 tbsp sugar, 1/4 tsp salt, 125ml/4floz mayonnaise, 1/2 head large green cabbage shredded, 2 carrots grated, 40g/1 1/2oz cashew nuts, crushed To make the marinade, combine the vinegar and sugar in a small pan and stir over a medium heat until the sugar is dissolved. Remove from the heat and add the salt and mayonnaise. Combine the shredded cabbage and carrots in a large bowl. Add the marinade and toss well.
