Pre-heat the oven to 180oC/350oF
3 1/2 ozs Double Cream 1/2 heaped tsp Turmeric 1 3/4 ozs freshly grated Parmesan 6 rashers cured back bacon 6 med size eggs 8 cherry Tomatoes - sliced 1 tsp fresh Chives chopped (they are easier to chop using scissors)
Mix the first 3 items together and stir well.
Using a palette knife, flatten out each rasher of bacon and then use the rashers to line the 'wells ' of a 6 deep muffin tin or yorkshire pudding tin. Coil the bacon strips around to form springs
Break an egg into each 'well' and add a few slices of tomato Top each with a small dollop of the cheesey cream mix. Scatter each with chopped chives.
Bake in the oven for about 15-20 minutes until the yolk has set and is puffed.
These can be served hot, warm or cold.

Hey Sylvia! this sounds like a real winner. Another word question...what is a rasher - a strip of bacon? I love anything with bacon and eggs...my DH will be so surprised tomorrow when I surprise him with another one of "Sylvia's best".

Yes, you are right a rasher is a strip. We buy ours in those awful plastic boxes and get about 8 rashers to the box. If you can get parked near one of our dying out wonderful butchers - their produce is superior to any of the pre-packs.
I'm glad your DH likes our Scottish offerings, you know what they say a change is as good as a rest.
My DH is enjoying lots of recipes that I am finding from all over due to the newsletter and message boards. He is currently adapting a grape wine recipe, that I copied, to use with our abundance of elderberries.
