V8 MEATLOAF www.nancys-kitchen.com/recipe_data.asp?Name=V8+MEATLOAF 1-1/2 lb. lean ground beef 3/4 c. Quaker oats or bread crumbs 1 egg 1 c. V-8 1 sm. onion, finely chopped 1/2 tsp. salt 1/4 tsp. pepper Combine all ingredients except ground beef. Mix these and then add to ground beef. Press into an 8 x 4 inch loaf pan. Bake at 350 degrees for 1 hour with the following topping. * I did not use the topping, I followed Nancy’s suggestion in another recipe and topped mine with some chili sauce. It was so yummy!!!! Thank you for the correct link!! I didn't know Nancy had soo many good recipes. Here is a meatloaf recipe that I found this morning...have been looking for one for a quick meal It is cooked in the microwave. SWEET & SOUR M/L
1 egg 5 tbsp. ketchup, divided 2 tbsp. mustard 1/2 cup dry bread crumbs or oatmeal or crushed saltines 2 tbsp. onion soup mix - I have use veg soup mix as well! 1/4 tsp. salt 1/4 tsp. pepper 1 lb. ground beef 1/4 cup sugar 2 tbsp. brown sugar 2 tbsp. cider vinegar - I use balsamic vinegar for an extra kick
In a bowl, lightly beat the egg. Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt, and pepper. Add beef to mixture and mix well. Put into lightly greased pan in loaf shape.
Place in a shallow 1-qt. microwave-safe dish; cover with waxed paper. Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half-turn once; drain.
In a small bowl, combine the sugars, vinegar, and remaining ketchup; drizzle over meat loaf. Cover and microwave on high for 3-5 minutes. Let stand 10 minutes before slicing.
Of course this will vary depending on the microwave oven power.

We had this V8 meatloaf again tonight with Nancy's chili sauce on top. Oh my! It was as good as it was the 1st time! [glow=red,2,300]You have to try it![/glow] Chris
