Cinnamon Swirl Bread
~~ Bread ~~
1 Cup Milk -- warmed to 70º to 80º **
1/4 Cup Water -- warmed to 70º to 80º **
2 Eggs
1/4 Cup Butter or Margarine -- softened
1 Teaspoon Salt
1/4 Cup Sugar
5 Cups Bread Flour
2 1/4 Teaspoons Yeast
~~ Filling ~~
2 Tablespoons Butter or Margarine -- melted
1/3 Cup Sugar
1 Tablespoon Cinnamon
~~ Glaze ~~**
1 Cup Confectioners' Sugar
4 Teaspoons Milk -- 4 to 5
1/2 Teaspoon Vanilla
Place the bread ingredients in machine in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; adding 1 to 2 tbsp. water or flour if needed) When cycle is completed, turn dough onto lightly floured surface; divide in half. Roll each portion into a 10" x 8" rectangle. Brush with melted butter; combine cinnamon and sugar; sprinkle over dough. Roll up tightly jelly-roll style. Starting with short side. Pinch seams and ends to seal. Place seam side down in two greased 9" x 5 " x 3" loaf pan. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 350º for 25 minutes. Cover with foil; bake 5 to 10 minutes more or until golden brown. Remove from pan to wire racks to cool completely. Yield: 2 Loaves
Combine glaze ingredients; Spoon over loaves.
** I omit this because we like it toasted and it makes a mess in the toaster
** heat water and milk to 90º about 45 seconds; add to egg the temp comes down to 80º
