I have tried this dish without the beer, I substituted the beer with a really good beef stock. It is better with the beer. I used Belhaven Best. Ask your nearest beer drinker for the name of a good beer. DON'T USE LAGER.
Drunken Beef
Serves 4 Switch your slow cooker on to it's highest setting
6 button mushrooms, sliced 2 onions, diced 2 carrots, sliced 2/3 cup of beer 1/4 cup olive oil 15 oz/450g beef diced, (I use a cheap cut like shoulder steak) 2 Tbsp tomato puree Salt & pepper 1 tsp fresh thyme (if you don't have fresh use 1/2tsp dry) 1 bay leaf 1 Tbsp flour
Cook the veggies in the beer and 2 Tablespoonfuls of the oil for 10 minutes. Add the meat on the top and spoon over the tomato puree. Add the seasoning, herbs and cook for 1 hour on high.
Reduce the setting and add the remaining oil and flour. Combine everything well and cook on low for 8 hours.
Remember to remove the bay leaf and serve with one of the following:
Creamy mustard mash and garden peas. Crusty home-made bread. some plain rice. or make a pastry shell and turn into a steak pie
