This is a favourite dish with youngsters. Serve it with loads of hot garlic bread.
Bean, Potato and Spicy Sausage
Serves 6
2 Tbsp oil 1 Onion, finely chopped 1 lb/450g small potatoes, thinly sliced 1 lb small sausages (chipolatas) 1 large 15oz/425g can of baked beans in tomato sauce 4 oz/100g button mushrooms, halved 1/4pt/150ml vegetable stock 1 tsp mustard (optional) 1 Tbsp chilli sauce 1 Tbsp tomato puree Salt and freshly ground pepper
Heat the oil in a large saucepan and cook the onion and potatoes for about 5 minutes, stirring occasionally.
Stir in the remaining ingredients and bring just to the boil. Transfer to the slo-cooker.
Cover and cook on LOW for 6 - 10 hours.
