There's a special offer on at the moment (BWGOF), buy one get one free on tins of Spam. In our student days a tin of Spam was a treat, but those days are long forgotten. So I have got about 6 tins of Spam to find uses for - a search revealed a lot of recipes. This one looks tempting, even better when you look at the source. Spam Stuffed Peppers February 2008 2 lg. green peppers 1 can Spam 1 sm. onion 1 med. potato, boiled 1 can tomato sauce Mash Spam well and add mashed potatoes and chopped onion. Mix well.; add 1/2 can tomato sauce and mix well. Cut green peppers in half and remove seeds. Fill them with stuffing and cover with the remaining tomato sauce. Place in greased pie plate. Oh my goodness - this really sounds good and easy - I'm going shopping for cans of Spam - I remember having this as a child - my Mom used to slice it and fry it up with eggs when I was a child (a zillion years ago). ;D That really brings back warm memories. As I love green peppers - this really tempts the taste buds.

Hi Sue,
Isn't it strange how certain foods bring back long lost memories. This spam reminds me of my favourite uncle. Uncle Bill was a prisoner of war for 3 years and 153 days during World War II and used to tell we kids some funny stories. He never complained. Anyway when I was older and babysat, he always made Spam fritters, i.e. spam dipped in batter and fried and we all thought it was wonderful.
Strangely enough you can now buy them in the UK already battered and ready for frying.
