Some days when I'm feeling less imaginative, like today we have tinned sardines on toast with a bit of salad for lunch. If we have unexpected - or even expected visitors I try to jazz a simple lunch up a bit. There is always a large jug of home made soup in the fridge. I have made this a couple of times and have to just call it fishy type bruchetta:
1 Tbsp of ready prepared creamed horseradish 1/2 shallot, very finely chopped 1 Tbsp creme fraiche salt and pepper to taste 1 Lemon, quartered 4 large slices of French bread, rubbed with a garlic clove, toasted and smothered in butter. 1 Tbsp parsley, finely chopped
You can either use :
2 cans of sardines in oil, drained - or 4 cans of mackerel fillets, drained - or 2 cans of crab, drained
Mix the horseradish with the creme fraiche, chopped shallot, salt and pepper.
Spread the toasts generously with the horseradish, then place your chosen fish on top and sprinkle with the chopped parsley.

PS The reason horseradish isn't mentioned in the name - my DH detests horseradish mmmm. Seems to enjoy this dish!
