This is a simple to make Tea Bread. It's dark and sticky and improves over a few days in an airtight tin.
Preheat oven to 180oC/350oF
5 ozs/150 ml water 3 ozs/150g caster sugar 4 ozs/110g sultanas 4 ozs/110g butter 1 tsp bicarbonate soda 1 large egg, beaten 1 tsp baking powder 6 ozs/175g plain flour
Grease and line a loaf tin and line it with greaseproof paper, also grease the paper
In a large saucepan put water, sugar, sultanas, butter and bicarbonate of soda.
Heat the pan on a medium heat, stir the ingredients together and bring them up to the boil and boil for 10 minutes exactly, be extra cautious against it boiling over. When the 10 minutes are up, remove the pan from the heat and let the mix cool.
Then add the beaten egg and the sifted baking powder and flour. Give it a good mix, then place the mixture in the prepared tin and bake for about 1 and 1/2 hours on the middle shelf of your oven.
